I am chasing a bad debt, I have been in contact with the individual via his gmail account that he listed on the contract he signed. He has stated that he is unable to pay due to poor health. There has been several emails back and forth but no contact for some time now.
Do these emails constitute a written acknowledgement of debt and would they stand up in court if he denies sending them as I am aware how easily emails can be faked.

I would depend, first and foremost, upon the invoices and any supporting documentation before going to the e-mails as proof of the debt. Since the customer has stated in many e-mails that he acknowledges the debt, and this doesn't appear to have been done just once, the e-mails would better serve as an indication that there was no dispute prior to the point you filed suit or took another action. Also, these could serve as an ongoing record of contacts, indicating, regardless of content, that you had pursued the customer and the debt over a period of time, supporting your eventual decision to sue.
You mention no contact for "some time now". How long?
